April 18th to April 26th. 100% hand picked. |
Vinification |
Hand sorting of the grapes before destemming. Pre-fermentive maceration for 6 to 10 days at 6ºC. Alcoholic fermentation in stainless steel tanks for 16 days at 28ºC to 30°C. Post ferment maceration for 2 days. Run off and malolactic fermentation. |
Ageing |
15% aged for 4 months in French oak barrels. 85% in stainless steel tanks. |
Food Pairings |
This friendly wine is well suited for a variety of meats and side dishes. Pork chops, sauted vegetables, grilled burgers , mashed potatoes or a juicy steak taste very good with this Cabernet Sauvignon-Merlot. If feeling link Italian, spaguetti Bolognese should be the choice. |
